Chicken with horse-radish sauce




600 gr chicken breasts
2 tsp horse-radish
1 cup milk
olive oil
salat, pepper
salad (optional): mozzarella, 2 tomatoes

Put some salt on chicken, and fry it on olive oil for cca. 2 minutes (each side 2 minutes). Add milk (1/2 cup), horse-radish, salt and pepper.
Cook untill chicken is done gradually adding the rest of the milk (cca. 15 minutes) and let the sauce thicken.
Meanwhile cut tomatoes and mozzarella in a separate bowl, pour over olive oil and add salt and pepper.
Serves 2.

Sun-Dried Tomato, Parmesan & Basil Whirls


Ingredients
  • 1 packet puff pastry, 500g, all butter
  • 2-3 cups of grated fresh Parmesan cheese
  • 1 cup sun-dried tomatoes, drained from olive oil and chopped
  • Fresh basil leaves, torn up
  • Chilli flakes to taste
  • 1 egg, beaten, for glazing

Potato Salmon Patties.


Ingredients

1 (14.75 ounce) can salmon, drained and flaked
2 eggs, beaten
1/4 cup garlic and herb seasoned dry bread crumbs
1/4 cup dry potato flakes
1 medium onion, minced
1 clove garlic, minced
1/4 teaspoon dried dill weed
1/4 teaspoon celery salt
salt and pepper to taste
2 tablespoons olive oil


Bacon-Parmesan Tassies


makes 24 tassies
8 Tablespoons (4 ounces) unsalted butter
4 ounces cream cheese
1 1/2 cup unbleached all-purpose flour
1/2 cup half-and-half
1 extra large egg
1/8 teaspoon kosher salt
4 ounces pancetta, cut into 1/4-inch dice, cooked and drained
1/2 cup grated parmesan cheese
1/4 cup chopped fresh chives
Cayenne pepper to taste

Spicy Sausage Pasta


Ingredients:

1 tablespoon olive oil
1 14-ounce package smoked turkey sausage, sliced into rounds (I used Butterball brand)
1 1/2 cup diced onion
2 cloves garlic, minced
2 cups low-sodium chicken broth
1 10-ounce can Ro-Tel Tomatoes and Green Chiles, Original Style
1/2 cup heavy cream
8 ounces uncooked penne pasta (about 2 1/2 cups)
1/2 teaspoon black pepper
1 1/2 cups Monterey Jack cheese, shredded
Thinly sliced scallions
Salt, to taste
