Spicy Louisiana Cajun Shrimp with Chipotle

Serves 6-8 as an appetizer

1 lb medium shrimp, peeled and deveined, with tail shell intact
2 tbsp olive oil
1 tbsp Cajun seasoning - homemade or store bought
1/2 tbsp chipotle peppers in adobo sauce, finely chopped
1/2 tsp brown sugar
1 lemon or lime, sliced in wedges for garnish
Salt and pepper, for seasoning


Sausage & Pepperoni Pizza Puffs

3/4 cup flour
3/4 tsp baking powder
1/2 tsp garlic powder
3/4 cup whole milk
1 egg, lightly beaten
4 oz mozzarella cheese, shredded (about 1 cup)
2 oz mini turkey pepperoni, (about 1/2 cup)
4 oz low-fat sausage, cooked and crumbled
1/2 cup pizza sauce

Mozzarella, Chicken & Asparagus Pasta

2 pound chicken breast, cubed
seasoning salt (I use Johnny's from Costco, I hear Lawry's is great too!
1 pound asparagus, cut into 1-2" pieces
1 pound pasta (penne or fusilli works great)
1 large onion, chopped
1 cup -1 1/2 cup grated mozzarella cheese
3/4 cup panko bread crumbs (or other bread crumbs)
1/4 cup (or a little less) + 1 Tablespoon olive oil

Baked Chicken and Spinach Flautas

Ingredients1 pound boneless, skinless Chicken Thighs (about 4)16 ounces Beer (or chicken broth)2 cups Water1 teaspoon Paprika1 teaspoon Kosher Salt1 teaspoon Garlic Powder1 teaspoon ground Cumin1 teaspoon Chili Powder1 Jalapeno Pepper, minced3 cups Baby Spinach, chopped5 burrito-size Flour Tortillas (9 inches)6 ounces Queso Quesadilla or other melting cheese, shredded1 tablespoon Olive Oil, or cooking spraySalsa, for serving
