Easy Plumb Bread




Ingredients: 

2 cups plain flour
1 cup white sugar
1/2 cup brown sugar
1 tsp. baking soda
1/4 tsp. salt
1 cup buttermilk
3/4 cup vegetable oil
1  large egg
1/4 tsp. ground cinnamon
1 tsp lemon peel, grated
1 1/2 cup  fresh plums, chopped and pitted



Directions:

Preheat the oven to 350 degrees F. Spray the two 8 x 4 inch loaf pans with cooking spray.

Add flour, baking soda, both sugars and salt in a large bowl, mix well. In a second bowl add oil, lemon peel, buttermilk and egg and whisk to combine. combine the two mixtures and stir until well blended. Stir in chopped plumbs.

Pour the mixture in two prepared loaf pans. Insert into oven and bake for 1 hour or until knife inserted comes out clean. Cool down to a room temperature and serve.
