Chicken And Vegetable Soup


1 tablespoon butter
1 onion, chopped
2 carrots, chopped
2 garlic cloves, minced
2 sprigs of fresh thyme
1 pound  chicken thighs
2 sprigs of fresh parsley
1 medium potato, pealed and chopped
2 teaspoons  sea salt
black pepper

Place a large pot on medium high heat, add in and melt butter. Add onion, chicken and garlic and saute for couple of minutes. Add in rest of the carrots, potatoes, parsley thyme and cover with water. 
Cook for 35 - 40 minutes on low heat, constantly adding water. Season with salt and pepper 5 minutes before its done. Decorate with fresh parsley,  serve hot.
