Turkey Bruschetta




Ingredients: 

8 oz. low-sodium turkey breast, thinly sliced
1 loaf baguette
1/4 cup fresh basil leaves, chopped  
2 tomatoes, thinly sliced
1 cucumber, thinly sliced
8 oz. Mozzarella cheese, sliced to stripes
2 cloves garlic
1 tablespoon. reduced fat mayonnaise
extra-virgin olive oil




Directions:

Heat griddle.

Cut the baguette to 1/3 inch thin, drizzle each piece with olive oil. Place on griddle and grill 5 - 7 minutes on each side or until lightly golden brown.

Rub baguettes with cleaned garlic cloves on one side, arrange one slice of cucumber, tomato and turkey on top. Sprinkle with fresh basil, add some mozzarella cheese and mayonnaise.Optionally, add some oregano. Serve immediately.
