2 cups whipping cream
1 cup Mascarpone cheese
4 tablespoons sugar
1 teaspoon vanilla extract
1 tablespoon rum
1 cup coffee, cold
7 oz. ladyfingers
3 tablespoons cocoa


In a large bowl whip 1 cup of whipping cream, 3 tablespoons sugar and vanilla extract. Add in rum and Mascarpone.

Soak the ladyfingers with coffee. Place them on the bottom of 6x10 inch baking sheet. Add half of the cream on top and level it out. Add one more layer of ladyfingers and finish with cream.  Place in refrigerator for 2 hours.

Frosting is optional but I like to do it:
Mix remaining whipping cream, sugar and one tablespoon cocoa in a medium bowl. Remove the cake an cut to squares. Coat the sides of tiramisu squares with frosting and cool it for another 15 minutes.

Dust with cocoa and serve.
