Sun-dried Tomato and Basil Gnocchi


1 package of gnocchi
1 bunch fresh basil leaves
1/2 cup sun dried tomatoes, chopped
3 cloves garlic, sliced
1 onion, diced
3 tablespoon olive oil
1/2 teaspoon salt
Fresh chive for decoration


Cook gnocchi according bag directions. Set aside but save 1 cup of gnocchi water. 
Place a large pan on medium high heat, add in  and heat the olive oil, add onion and saute for few minutes until golden brown. Add in basil, garlic,  salt and sun dried tomatoes. Stir fry for 3 minutes, add in water from gnocchi and cook until its reduced. Add in gnocchi and cook until all is well combined.

Serve in a large plate and top with some fresh chive.
