Hot Cross Buns




Ingredients: 

3 cups flour
2 large eggs,
1 tablespoon active dry yeast
1 cup warm water
3 tablespoons butter
1 tablespoon powdered milk
2 teaspoons milk
1/3 teaspoon vanilla extract
1/4 cup sugar
1/3 teaspoon salt
1/2 cup powdered sugar
1 cup dried currants
1 teaspoon ground cinnamon

Directions:

Separate yolk and egg white from one egg. Combine flour, yeast, butter, powdered milk, sugar, salt, 3/4 cup water, one egg and one egg white in a large bowl and make a dough. Add in cinnamon and currants and knead for 8 minutes. Cover with towel and leave on warm place until dough is doubled.

Move the dough onto floured wooden surface, punch it and let it rest for another 5 minutes. Cut it and shape into 12 balls and arrange into 12 x 9 inch baking pan. Let it rest on warm place for another 30 - 35 minutes. Combine egg yolk with 2 tsp. of water and brush on buns.

Preheat the oven to 375 degrees F. and insert the buns. Bake for 20 minutes. When done, remove from oven and let it cool down a bit. Combine powdered sugar, milk and vanilla extract. Draw an x on each bun. Enjoy!
