Grilled Shrimp Salad



Ingredients: 

16 large fresh shrimp, peeled, deveined
1 tablespoon lemon juice
2 tablespoons olive oil
1 tablespoon vinegar
1 green onion, chopped
1 green bell pepper, sliced
1 red bell pepper, sliced
1 carrot, sliced
fresh dill
salt to taste




Directions:

In a small bowl combine olive oil and lemon juice. Add in shrimp and toss to coat. Thread shrimp on metal skewers, heat up and oil the grill, place shrimp and grill for 5 minutes on each side. Brush them with lemon juice mixture.

In a large bowl add veggies, season with salt and vinegar, toss to coat, move the salad to a serving plate and add grilled shrimp on top.
