Ingredients:
1 1/4 cup flour
2 tablespoons white sugar
2 teaspoons baking powder
1/3 teaspoon salt
2 eggs, slightly beaten
2 tablespoons oil
milk (to make batter pourable)
Maple syrup
1 cup cream cheese, softened
2 cupsfresh fruit (strawberry, blueberry, raspberry...)

Directions:
In a large bowl mix flour, baking powder and sugar. Stir in eggs and add in just enough milk to be able to pour batter easily. Mix until smooth.
Place a pancake pan on high heat, grease with oil and pour batter in. Cook for few minutes on each side.
On a large serving plate place one pancake, then pour some maple syrup, repeat with two more pancakes and place some fresh fruit and cream cheese on top.
