Ingredients:
1 sheet of pre rolled flaky puff pastry
6 medium eggs
2 tablespoons butter, melted
1 small onion, chopped
3 slices of shoulder bacon, fried and crumbled
2 tablespoons of extra virgin olive oil
Parmesan cheese, freshly grated
salt and pepper to taste
1 bunch parsley

Directions:
Preheat oven to 400 degrees.
First cut the pre rolled pastry into a squares. They must a bit larger than muffin cups. Arrange pthe pastry into a muffin cups making tiny wells. brush the squares with melted butter.
Brown the onions in heated olive oil and season with salt and pepper. Spoon the onions into prepared pastry wells, add in some bacon and one egg per puff square.Place into a preheated oven (400 degrees F), and bake for 10 minutes.
Remove the puffs from oven, top with some Parmesan cheese and decorate with parsley leaves. Serve while hot.
