Zuchinni And Garlic Soup




Ingredients: 
2 cloves garlic, minced
1/2 cup butter
15 ounce chicken broth
2 pounds zucchini, cut into chunks
1 teaspoon curry powder
Salt and pepper to taste
Extra virgin olive oil
Parsley for decoration




Directions:

Place the pot on medium high heat, add in butter and melt it. Add in garlic and saute for 2 - 3 minutes. Add zucchini, curry powder chicken broth and season it with salt and pepper. Simmer fo 15 minutes, stir occasionally.

Remove the spoup form heat,let it rest and cool down for couple of minutes and pour it in blender. Blend it until smooth. Pour the soup in a large serving plate, add a few drops of extra virgin olive oil and decorate with parsley.
