Ingredients:
10 small tomatoes or cherry tomatoes, cut in half
1 tablespoon olive oil
1/2 cup fresh basil leaves
1/4 cup balsamic vinegar
8 ounces mozzarella cheese, sliced
1/4 teaspoon salt
1/8 teaspoon ground black pepper
7 tablespoons pine nuts

Directions:
In a frying pan toast the peanuts for a few minutes and set aside.
On a large serving dish combine mozzarella and tomatoes. Mix vinegar, olive oil, salt and pepper in a small pot and drizzle over salad. sprinkle with toasted peanuts and fresh basil leaves.
