Beef and Pork Meatballs




Ingredients: 
1 cup fresh bread crumbs
2/3 pound lean ground beef
2/3 pound lean ground pork
1 small onion, minced
1 teaspoon salt
1/3 teaspoon ground black pepper
1 cup water
5 tbsp butter
2 egg yolks
1/4 teaspoon nutmeg, grated
1/4 teaspoon chili, grounded
Freshly chopped parsley

Directions:
Heat the large skillet, add in and melt one tbsp. of butter. Add in onion and cook for 2 minutes, stirring occasionally. After onion is golden brown, remove from heat and let it rest.

In a food processor bowl mix water and breadcrumbs. Let it soften for 2 minutes. Add in beef, pork, nutmeg, egg yolks, chili, salt, pepper and sauted onion. Turn on the food processor with paddle attached on slow speed. Mix for 10 minutes. Increase the speed for last 3 minutes.

Shape the meatballs into 1 to 1 1/2 inch size. Add in rest of butter in a large skillet and place it on medium heat. When the butter melts, add meatballs and brown them on all sides. Remove them to paper towel to drain and then to a serving dish. Decorate with fresh parsley. Serve the meatballs with your favorite sauce.
