Tortilla Soup With Chicken And Avocado




Ingredients: 
1 large onion, chopped
2 cloves garlic, minced
1 tablespoon olive oil
1 boneless chicken breast, cooked and cut into 1 inch pieces
1 bag crushed tortilla chips
1 cup water
1 teaspoon chili powder
1 can crushed tomatoes
1 can chicken broth
1 tablespoon chopped fresh cilantro
1 green chili pepper, chopped
1 can black beans, rinsed and drained
1 teaspoon dried oregano
1 avocado, sliced

Directions:

Heat olive oil in a medium pot. Add in onion and garlic and saute until soft and golden brown. Add in tomatoes, broth, water,  oregano and chili powder and stir until well mixed. Simmer 8 minutes.

Add in chicken, black beans and cilantro and simmer for another 10 minutes. Remove from heat, and fill the large serving plates. Add crushed tortillas and few slices of avocado to each plate. Serve while hot.
