Salmon Sushi




Ingredients:

2 cups short grain rice
2 cups water
2 tablespoons rice vinegar
2 tablespoons sugar
1 tablespoon kosher salt
6 nori sheets
7oz fresh salmon, cut into 1/2 inch thick batons
Light soy sauce and / or Wasabi paste to serve



Directions:

Wash the rice in cold water 2 - 3 times, until water is clear. Place washed rice in small pan with 2 cups of water and bring it to boil. Lower the heat and cook for 13 - 15 minutes. Remove from heat and let it rest for 10 minutes.  Mix the vingegar, salt and sugar in a small dish. Heat in microwave for couple of seconds to melt the sugar, pour over the rice and stir it good to coat every grain of rice.

Lay out the nori sheets, spread the rice over the sheets evenly, leaving half inch gap along the edge. On the opposite side of gap place salmon stripes in a straight line. Roll the sushi form salmon to to open end of sheet. Slice each sheet in 5 - 6 peaces and place on a serving plate. Serve with soy sauce or wasabi paste.
