Ingredients:
Crust:
2 cups all purpose flour
1/2 cup sugar
1 cup butter , softened
Pinch of kosher salt
Filling:
1 cup flour
6 large eggs
2 tablespoons lemon zest, grated
1 cup lemon juice
3 1/2 cups granulated sugar
Powdered sugar
Directions:
Preheat the oven to 375 degrees F.
In a large bowl add butter and sugar and mix it with paddle until light. Add salt and flour, mix it again to get fine dough. Flatten the dough on floured wooden board and place it on a baking sheet. Put the sheet in fridge for 5 minutes, and then in heated oven for 15 minutes.
Meanwhile mix flour, suggar, lemon zest, lemon juice and eggs. Remove baking sheet from oven, pour the filling over crust and bake for another 35 minutes. Let it cool down, sprinkle powdered sugar over the top and cut into squares.
