Fruit Pancake Puffs




Ingredients:

  1  cup all-purpose flour
    2  teaspoons baking powder
    1/3 teaspoon salt
    1 egg, beaten
    1 cup milk
    2 tablespoons granulated sugar
    1 teaspoon ground cinnamon
    fruit jam
    3 tablespoons butter, divided, melted and cooled
    powdered sugar




Directions:

In a medium sized bowl add in flour, baking powder, salt and half of cinnamon. In a second dish bowl mix milk, 2 tbsp of butter and beaten egg. Pour second mixture into first one. Stir new mixture until smooth and well combined. 
Coat the ebelskiver pan with remaining butter.Pour the mixture to until cups are 2/3 full and place pan to medium high heat. bake for 30 seconds and gently pull each pancake up and roll to unbaked side. 
After every side is baked, remove them form pan, cut them in halves, add fruit jam in the middle and close each puff. Sprinkle powdered sugar on top of puffs.  Serve while hot!
