Duck in Orange Sauce




Ingredients: 
2 duck breast halves
1 tablespoon granulated sugar
2 tablespoons water
2 tablespoons Sherry vinegar
1  cup orange juice
2 tablespoons shallots, minced
1  cup chicken stock
1 cup orange cut from membranes.
salt and pepper
1/4 cup butter
1 tablespoon olive oil.
1 clove garlic, minced
1 tablespoon orange zest

Directions:

Add in water and sugar in pot, place over medium high heat and boil for few minutes until golden brown. Add in shallots, Sherry vinegar, chicken stock and orange juice. Cook until reduced, add butter, zest and orange, cook for another few minutes and remove from heat.

Heat olive oil in a skillet and add in garlic and cook for 1 minute. Add in duck and cook for 10 minutes on each side. Add in the sauce and  cook for another 2 minutes.

Remove the duck to a large serving plate and sauce on top.
