Ingredients:
2 cups cooked pork
3 tablespoons olive oil
2 eggs, beaten
1 onion, chopped
1 teaspoon dried chili pepper flakes
1 red bell pepper, seeded and chopped
2 1/2 cups cold cooked white rice
1 can sliced mushrooms, well drained
1 tablespoon soy sauce
2 chopped green onions
Directions:
In a large skillet heat 1 tablespoon of of olive oil and in cooked ham and stir fry for 5 minutes, remove to a plate and set aside. Heat 1 tablespoon olive oil in same skillet, add in the beaten eggs and stir fry them until you geg small peaces (about 3 - 5 minutes), remove to a another dish.
Heat 1 more tablespoon oil, add in the chopped onions, chili flakes, and red bell pepper. Saute for about 3 minutes or until soft. Add in the mushrooms and saute for another 3 minutes, then add pork, eggs, cooked rice and soy sauce. heat it well and remove to a large plate. Add chopped green onion on top.
