Chicken, Cucumber and Carrot salad

1 large chicken breast, cooked and sliced to 1/2 inch
1  cup cucumber, chopped and seeded
1 cup carrots
1 tablespoon olive oil
2 tablespoons fresh cilantro, chopped
2 coves garlic, minced
salt and pepper to taste
1/4 teaspoon ground cumin
3 green leaf lettuce leaves


In a large bowl mix chicken carrots, cucumber and chicken breasts. Season it with salt and pepper to taste.  In a small bowl mix cumin, garlic and cilantro. Combine two mixtures and add in olive oil. On a large plate place one leaf of lettuce and top with chicken salad. Serve  at room temperature.
