Asian Chilli Shrimp




Ingredients:

2 tablespoons extra virgin olive oil
1 large can coconut milk
1 large onion
3 tablespoons red Thai curry paste
1 tablespoon fish sauce
1 fresh long red chilli, chopped
24 large shrimp, peeled 
Fresh chive for decoration





Directions:

Heat the olive oil in a large skillet or wok over medium high temperature. Add in curry paste, coconut milk, chilli, onion and fish sauce. Bring to boil and saute for 4 - 5 minutes. Lower the heat and add in the shrimp. Cook for another 10 minutes or until prawns are cooked. Stir occasionally. Decorate with fresh chive and serve while hot.
