vegetable casserole


2 onion, finely chopped
3 garlic cloves, sliced 
2 teaspoon dried thyme
3 carrots, sliced)
3 small sticks celery, finely sliced
2 peppers, chopped
2 tbsp olive
2 teaspoon smoked paprika
2 cans peeled tomatoes
1 tablespoon vegetable stock cube
3 courgettes, sliced thickly
2 medium leek, sliced
1 cup white beans, cooked
Salt and pepper to taste


Heat the olive oil in a large pan and add the onions. Saute for 5 mins, add garlic, thime, celery, peppers, leek and carrots, and cook for another 5 minutes. Melt stock cube in a cup of watter, add the mixture in vegs and then add tomatoes and courgettes. Cook for another 25 minutes. Stir in the white beans and cook for 3 minutes. Serve while hot.
