Tomato and Shrimp Pasta




Ingredients

10 ounces uncooked pasta
1/3 pound sliced fresh mushrooms
1 pound uncooked shrimp, peeled and deveined
3 tablespoons olive oil, divided
1/2 cup onion, chopped
2 cans diced tomatoes
2 tablespoons tomato paste
1/2 teaspoon crushed red pepper flakes
2 tablespoons fresh basil, minced
1 teaspoon garlic, minced
1 teaspoon dried oregano
1/2 teaspoon sugar


Directions:

Cook pasta according to directions and let it rest.

Next, in a large skillet, heat 1 tablespoon of olive oil, add shrimp and garlic and saute for 3 minutes or until shrimp turn pink. Remove from heat and let it rest.

In another skillet heat remaining olive oil, add onion and saute for one minute. Then add mushrooms and saute for another 2 - 3 minutes or until mushrooms turn brown and soft. Add tomato cans and paste. Cook for 3 - 4 minutes and add shrimp, sugar, basil, pepper and oregano. Cook for another 7 - 9 minutes. Season with salt if needed. On a large plate, first place pasta and add some sauce on top. Decorate with herbs and serve.
