Sweet Potato Souffle


5 cups cooked and mashed sweet potatoes
2/3 cup butter, softened
2/3 cup melted butter
2 1/2 eggs
1 teaspoon vanilla extract
2/3 cup milk
1 cup flaked coconut
2/3 cup all-purpose flour
1 cup packed brown sugar
1 cup white sugar
1 1/2 cup chopped nuts


Preheat oven to 350 degrees. Mix the mashed sweet potatoes with the white sugar, beaten eggs, soft butter,milk and vanilla. Spoon into a cheramic baking dish. Then mix the flour, brown sugar, chopped nuts, coconut and melted butter. Sprinkle over the top of the potatoes. Bake at 350 degrees for 35 to 40 minutes.
