Grilled Veggie Patties




Ingredients

3 carrots, shredded
1 onion, chopped
3 cloves garlic, crushed
3 teaspoons olive oil
1 summer squash, shredded
1 zucchini, shredded
1 cup rolled oats
1/3 cup black bean, cooked
1/3 cup Cheddar cheese, shredded
1 cup all-purpose flour
1 egg, beaten
Salt and pepper to taste
Fresh parsely, chopped


Directions:

Heat the olive oil in a  large skillet over medium heat, add the onion and garlic and saute for about 3 - 4 minutes until light brown. Add the zucchini, black beans and carrots. Cook while stirring for 3 minutes. Remove skillet from heat, and mix in oats, egg and cheese. Give it a good stir and place the mixture to a fridge for 1 hour.

Remove from fridge, create 3 inch round burgers from the mixture and coat them with flour. Heat the grill,oil it and grill patties 5 - 7 minutes on each side or until they are nice crisp and brown. Remove from grill and place into a large serving dish.
