Grilled Chicken and Lime Flautas




Ingredients

1 teaspoon salt
1 teaspoon chili powder
2 cloves garlic, minced
2 tbsp vegetable oil
1/2 cup fresh lime juice
2 medium size chicken breasts
salt to taste
2 teaspoons minced garlic
1/3 cup roasted red pepper
1/3 cup  onion
1/2 cup shredded monterey jack cheese
1/2 ounce lime juice
18 corn tortillas


Directions:

Mix salt, chili powder, 1 clove garlic (minced) 2 tbsp oil, half of lime juice and add chicken breasts. Leave the marinade in fridge for 3 hours. Grill the meat, let it cool down and and shread it to 1inch thick stripes. Sprinkle it with salt and rest of garlic, add red pepper, onion, cheese and rest of lime juice. Mix it well. Grill tortillas for 10 - 15 sec each, add the filling to one side and roll them. Heat the oil in a pan and try tortillas for one minute on each side. Remove from pan and place on kitchen towel to drain. Serve while hot.
