Bacon and Spinach Quiche


1 pound cooked and crumbled bacon
1 1/2 cups shredded Swiss cheese
7 eggs, beaten
1 refrigerated pie crust
1 1/2 cups heavy cream
Salt and pepper to taste
2 1/2 cups chopped fresh baby spinach


Mix the cream, eggs, salt, and pepper in a food processor. Place the bacon, spinach, and cheese in the pie crust, then pour the eggs on top of pie. Insert the quiche in heated oven (to 375 degrees F). Bake for 40 to 45 minutes. Let it rest for 15 minutes and then serve.
