Greek Yogurt Strawberry Banana Bread

 

Ingredients

1 1⁄2 cup Whole Wheat Pastry Flour
3 tablespoons Whole Wheat Pastry Flour
1 1⁄2 teaspoon Baking Powder
1⁄2 teaspoon kosher salt (optional)
1⁄2 cup Brown Sugar (or 1/4 cup agave nectar)
3 Large ripe bananas
2 Eggs
6 ounces
Chobani Strawberry Banana Greek Yogurt
1 cup
Diced Strawberries

Instructions

  1. Preheat oven to 375 degrees.  Start by combining flour, baking powder, and salt in a large mixing bowl.
  2. In a separate bowl, mash bananas with a fork until they are gooey and liquid-like.
  3. Add eggs and sugar… mix thoroughly.
  4. Add greek yogurt
  5. Whisk until everything is well combined and there are no lumps.
  6. Pour the wet ingredients into the dry ingredients, and mix until just combined.  At this point, fold in the fresh strawberries!
  7. Pour batter into a greased loaf pan and distribute evenly.
  8. Put into the oven and bake for one hour, or until the top is golden brown and a toothpick comes out clean.
  9. Transfer to a cooling rack and (try to) let the bread cool for at least ten minutes before slicing.

I tried this recipe and it didn't turn out too great for me. I followed the directions but the top got burnt and I couldn't tell if the inside was finished. The consistency was very chewy too. It may have been my oven but until I move, I won't be making it again!

Perhaps you did not mash the banana well enough or perhaps it wasn't whisked enough to get all the pockets and lumps or perhaps your oven needs calibration. I'm trying the recipe now and will let you know how it turns out. I measured everything including using a food scale for the Greek Yogurt.
