Cottage Cheese Dumplings




Ingredients: 

1 3/4 cups cottage cheese
2 large eggs
1/4 cup semolina
1/2 tablespoon baking powder
1/4 cup breadcrumbs
2 tablespoon vegetable oil
1/8 teaspoon salt
powdered sugar for decoration
fruit compote


Directions:

Place the cheese into a food processor and process it for few minutes. Move it to a large bowl. Whisk in eggs, salt and semolina. Pour the water in a large pot and bring to boil.

Make 6 balls from the mixture and gently throw them into the water. Cook until they float to surface. Drain the dumplings and set aside.

Add oil and breadcrumbs in a large skillet and toast it over medium high heat. Remove from heat and add in the dumplings. Toss to coat.

Move to a serving plate, top with powdered sugar. Serve with fruit compote.
