Sun-Dried Tomato, Parmesan & Basil Whirls

Ingredients 1 packet puff pastry, 500g, all butter 2-3 cups of grated fresh Parmesan cheese 1 cup sun-dried tomatoes, drained from olive oil and chopped Fresh basil leaves, torn up Chilli flakes to taste 1 egg, beaten, for glazing

Potato Salmon Patties.

Ingredients 1 (14.75 ounce) can salmon, drained and flaked 2 eggs, beaten 1/4 cup garlic and herb seasoned dry bread crumbs 1/4 cup dry potato flakes 1 medium onion, minced 1 clove garlic, minced 1/4 teaspoon dried dill weed 1/4 teaspoon celery salt salt and pepper to taste 2 tablespoons olive oil

Bacon-Parmesan Tassies

makes 24 tassies 8 Tablespoons (4 ounces) unsalted butter 4 ounces cream cheese 1 1/2 cup unbleached all-purpose flour 1/2 cup half-and-half 1 extra large egg 1/8 teaspoon kosher salt 4 ounces pancetta, cut into 1/4-inch dice, cooked and drained 1/2 cup grated parmesan cheese 1/4 cup chopped fresh chives Cayenne pepper to taste
