Shrimp And Vegetable Stir-fry




Ingredients:

1 cup chicken broth
1/4 cup fresh orange juice
2 tablespoons soy sauce
1 tablespoon cornstarch
2 tablespoons or olive oil
1 pound large shrimp, peeled
4 garlic cloves, minced
1 large green bell pepper, chopped
5 young carrots, sliced
0.3 pound broccoli florets
0.3 pound young green beans, chopped
2 cups brown rice, cooked


Directions:

Add in olive oil in a large skillet  and heat it over medium heat. Add in shrimp and stir fry for 2 - 3 minutes. Add in minced garlic and stir fry for another 2 minutes. Shrimp will be lightly pink. Remove to plate.

In a small bowl mix together chicken broth, cornstarch, orange juice and soy sauce and set aside.
In a skillet used for shrimp add in bell pepper, carrots, green beans and broccoli and place on a medium heat. Stir fry for 3 minutes and add in chicken broth mixture. Saute for another 2 - 3 minutes stirring occasionally. Return shrimp to skillet and toss to coat. Serve with brown rice.
